Market history retention tiers

The tiered model keeps raw capture tables short-lived, hourly rollups for the medium troubleshooting window, and daily history projections for the long-lived UI/reporting window.

Redis performance layer

Redis stays optional and non-authoritative. MySQL remains the source of truth while Redis accelerates cached summaries, comparison defaults, metadata lookups, and lightweight distributed locks.
